Method
Remove collagen casing from the pack.
No need to soak use straight from the pack.
Place on the nozzle, narrow end first.
Pull enough casing from the broad end to tie a knot.
Use a little vegetable oil on your hands when filling your sausages. This will make them easier to handle and give your sausages a professional shine. (Optional)
Fill casings with your mixture. As with all sausage casings, do not over-fill as your sausages will expand when cooking and burst if they are too full.
Refrigerate overnight to allow your mixture to marinade.
Keep your remaining skins dry and store in an airtight container in the cupboard. No need to refrigerated casings.
See below for our casings size chart, the nozzle size should be roughly half the mm of the casing diameter, this allows the sausage to be filled precisely & professionally without the casing splitting or bursting, we have also provided a rough estimate of how many sausages you will get from 1lb minced meat mixture.

Step 1: Choosing your casing size.
Choose the correct collagen casing size for your desired sausage size.
19mm-23mm are smaller more chipolata sized sausages.
26mm-30mm would produce general breakfast sized sausages.
32mm-34mm produce larger sausages such as cumberland, boerewors etc.
Step 2: Thread on to nozzle.
Thread the casings straight from the pack on to the nozzle, if you aren't sure which nozzle to use, check out our table above!
We recommend the nozzle is approximately half the diameter of the casing diameter, this allows more precise filling.
Step 3: Feed the sausages by hand.
Slowly feed the casings as the meat mixture fills the casings.
Use a little vegetable oil on your hands to do this smoothly, and use a very light hand as the casings can be delicate.
Try not to overfill the casings as this can cause them to burst when cooking as the meat will expand.
Step 4: Cook and serve!
Cook your sausages as preferred (BBQ, grill, frying)
We do not recommend these casings are boiled, this can cause the casing to break down resulting in a burst sausage.
