A non-alcoholic aperitif inspired by the Nordic regions

Botanicals

A delicate combination of lavender, elderflower and fresh pine with a hint of berry sweetness and herbaceous dill. on the nose.

Sweet yet complex berry flavours on the palate with a faint hint of salinity from kelp and samphire. Floral notes from elderflower and resinous pine provide a full spectrum of flavour.

The finish is long and lingering with sweetness making way for elderberry tartness, dryness from sage and pine and lasting sense of the sea from the subtle flavours of kelp.

The Process

To create the base for ‘Midnight Sun’, our expert distillers first make a ‘botanical steep’. 7 hand-sourced and carefully balanced botanicals including elderberries, seaberries, kelp and samphire are steeped in a neutral grain spirit and water which macerates for 48 hours at about 40% ABV. The use of alcohol to extract and carry flavour is an important part of the process. Next, using a combination of craft and innovation, the ‘botanical steep’ is then distilled in our rotary vacuum still; a process that removes the alcohol without removing the flavour. This creates a highly concentrated core flavour distillate, which acts as the backbone of ‘Midnight Sun’. This core flavour distillate is then carefully blended with a further 7 natural flavours such as lingonberries and pine and stabilised with the unusual use of kombucha.

'Midnight Sun & Tonic'

Our ‘Midnight Sun & Tonic’ is best served in a highball glass, with plenty of ice and one large measure of ‘Midnight Sun’ to three parts premium light tonic water. Garnished with two raspberries and a mint leaf to deliciously highlight its complex notes of wild coastal berries, pine, and kelp.

'Oslo Highball'

Our 'Oslo Highball' cocktail showcases 'Midnight Sun' and is crisp, fragrant and ultimately thirst-quenching. Sipping this is like taking in a deep breath of fresh Nordic air in the glowing midnight sun.

To recreate, simply muddle 3 blueberries in a cocktail shaker, before adding 50ml ‘Midnight Sun’, 15ml lime juice and 15ml honey water*. Fill with ice and shake vigorously for 15 seconds. Double strain into a chilled highball over ice and top with Raspberry Dash Water. Garnish with a sprig of dill and 2 blueberries.
